Growing Unique Winter Greens at Trillium Hill Farm

At Trillium Hill Farm, we believe winter is no reason to stop growing fresh, vibrant greens. With a mix of careful crop planning, unique rotations, and a commitment to diversity, our winter greens thrive in unheated hoophouses, offering our customers fresh, flavorful produce even in the coldest months.

The Foundation of Our Winter Production

Our winter greens are grown in single-layer poly hoophouses spanning about a third of an acre. These structures allow us to extend the growing season without artificial heat, using only the natural warmth of the soil and sun.

We grow a variety of crops that not only tolerate winter conditions but flourish in them. Some of our favorites include:

  • Spinach– A true cold-weather champion, producing throughout winter.

  • Lettuce Mixes – Offering a steady supply of tender, flavorful leaves.

  • Arugula, Mizuna, and Other Asian Greens – Providing peppery and mild flavors perfect for winter salads.

  • Kale, Frisée, Minutina, and Claytonia – Resilient and nutrient-dense greens that thrive in cold conditions.

  • Sorrel and Cress – Unique, tangy greens that add a burst of flavor to dishes.

  • Overwintered Onions – Interplanted with lettuce to maximize space and efficiency.
